"How to use Nambu ironware"
Since its founding in 1625, Suzuki Morihisa Workshop has been carrying on the traditions of Nambu ironware for 400 years and 16 generations.
Even today, they are carefully crafted using traditional techniques unique to the southern region. If used correctly, iron kettles can be passed down to the next generation, and the longer they are used, the more attractive they become.

[Starting to use]
Although iron kettles can be used with any heat source, including household gas, induction heaters, and electric cookers, it seems that some models do not react to induction. Please check in advance whether the average size of the base of an iron kettle (approximately 10 cm) will react to it. Also, when using an induction heater on high heat, it generates vibrations that may cause the iron kettle to break or crack.
When using, use medium heat or lower. First, fill the kettle with about 70% water, boil the water, and discard it. Repeat this process 1-2 times. Once the lacquer broom residue remaining inside the kettle is gone and the water becomes colorless and transparent, it is drinkable. After that, we recommend using the kettle every day if possible to break it in.
[About scale]
After using an iron kettle for a while, brown spots and white sediment will begin to form on the inside of the kettle. This is called "scale", and is made up of layers of calcium carbonate, chlorine, and minerals contained in the water. The deposition of scale is the result of an exchange action that removes the above components from the water and dissolves the ionized iron called ferric iron. Brown scale appears when soft water is boiled, and white scale appears when hard water is boiled. It is this scale that allows the iron kettle to produce delicious hot water. It is not rust or dirt, so do not rub or peel it off. Do not touch the inside of the iron kettle.
[Daily care]
There is no special maintenance required. After boiling water in the iron kettle, immediately empty the kettle by making tea or pouring it into a pot. Then open the lid and place it on a bottle holder. The water will evaporate and dry as the kettle preheats. Also, if the lid rolls and falls, the knob may break, so it is a good idea to use a lid rest. In any case, empty the kettle immediately after use, open the lid, and dry it, that's all. There is no complicated maintenance required.

"Forgetting to drain the water" "Excessive boiling without water"
These two are the main causes of iron kettles rusting.
In addition, the inside of the iron kettle is covered with a film called an "oxide film." Under no circumstances should you scrub it or wash it with detergent. If the inner film is damaged, it can cause rust. Do not touch the inside of the iron kettle. This may be the most important thing.
[Storage method]
Store the kettle in a place with as little humidity as possible and out of direct sunlight. There is no need to wrap it in cloth or put it in a paulownia box. When cooking, keep the kettle away from the stove, as oil will splash and become difficult to remove.
[About repairs]
If you are unable to use your iron kettle comfortably for any reason, such as rust appearing, the handle coming loose, or the surface becoming burnt and looking bad, we will repair it for a fee, except for initial defects. (Initial defects will be handled within 7 days after the arrival of the iron kettle.)

[Daily care]
If the product becomes dirty, wipe it with a dry cloth or wash it with hot water. In that case, please wash it by hand without using a sponge. After washing, press it with a cloth that you don't mind color transfer to remove moisture and dry it. Please avoid washing with water, salt, and oil.
